Valensole: Fields of Yellow

While on the Valensole Plateau enjoying the lavender fields, I stopped to capture this beautiful field of yellow just after sunset. The colors were beautiful.  These plants are usually very prevalent in the same area as the lavender, yet most of the fields I’d seen throughout the day had been cut back.  Luckily, this field had not been cut back yet and was absolutely beautiful. It smelled awesome as well…very different and hard to explain, but I liked it.  I looked up the plant…here’s what it’s called. 

Helichrysum curry plants (Helichrysum italicum), are mounding plants that reach heights of only about 2 feet (0.5 m.). Although the silvery-grey, needle-like leaves smell like curry, these curry plants are ornamental and not recommended for culinary purposes, as the flavor is very strong and bitter. However, the dried foliage makes beautiful wreaths and delightful potpourris.
